
Nestled in the quiet little town of Boerne,
Texas along the beautiful Guadalupe River
(from which we chose our company name) I opened a
meat processing plant in the mid 1980’s with
the intent of producing authentic East Texas
Barbeque. My products won many contests
including the prestigious Fancy Food show (NASFT)
in New York City for best “Whole Meat” two
years in a row. Since then we have
established our products in many markets and
become sought after for our fine packaged
meats.
GUADALUPE meats are carefully selected from
the best packers, and our choice of wood is
Hickory. We carefully trim our meats and use
preservatives minimally. Our flavoring
agents are mostly pepper, salt, and garlic.
Our Beef Briskets, Peppered Hams, and
Sausage Links are smoked / cooked in
wood-burning pits.
My roots
stem back to south-east Texas where I grew
up watching my mom in her kitchen which is
long remembered for the wonderful aromas of
good beans, cornbread, gravies, smoked
meats, and condiments (that were
home-canned). Little did we know back then
we were eating healthful foods, but now in
an age of health consciousness and low fat
requirements we know that she was ahead of
her time. It is with great pride that the
recipes for these wonderful foods have been
preserved for our enjoyment today including
my line of bean dinners, condiments,
cornbread and dessert.
Through
the years I have conditioned my palate with
fine foods and wine and still look forward
to the foods I refer to as Texas Gourmet –
